Champagne traditionally refers to sparkling wines from the region of France by the same name, although in the US the term has become somewhat generic. Most Champagnes are non-vintage, a term describing a bottle that has been blended with the result of many year's harvests. If the wine house determines that a particular year's batch is of sufficient quality, then a vintage release will be made. Champagne is typically produced from a blend of chardonnay, pinot noir, and meunier grapes, although, more rarely, five other varietals are permitted.
Champagnes, as with most sparkling wines, tend to pair well with a variety of appetizers, both mild and strong cheeses and hold up particularly well to most salty dishes or snacks. Bubbly wine is generally more versatile than still wines for pairing with food, making it an ideal celebratory drink that may accommodate occasions ranging from New Year's Parties to weddings.

Chardonnay is a green-skinned grape variety used to make white wine. It is believed to have originated in the Burgundy wine region of eastern France but is now grown wherever wine is produced, from England to New Zealand.
The Chardonnay grape itself is very neutral, with many of the flavors commonly associated with the grape being derived from such influences as terroir and oak.[2] It is vinified in many different styles, from the elegant, "flinty" wines of Chablis to rich, buttery Meursaults and New World wines with tropical fruit flavors.

Pinot gris has been known from the Middle Ages in the Burgundy region, where it was probably called Fromenteau. It spread from Burgundy, along with Pinot noir, arriving in Switzerland by 1300. The clone of Pinot gris grown in Italy is known as Pinot grigio. The grape was reportedly a favorite of the Emperor Charles IV, who had cuttings imported to Hungary by Cistercian monks: the brothers planted the vines on the slopes of Badacsony bordering Lake Balaton in 1375. The vine soon after developed the name Szürkebarát meaning "grey monk." In 1711, a German merchant, named Johann Seger Ruland (re)discovered a grape growing wild in the fields of the Palatinate. The subsequent wine he produced became known as Ruländer and the vine was later discovered to be Pinot gris (grigio).

Cabernet Sauvignon is a variety of red grape mainly used for wine production, and is, along with Chardonnay, one of the most widely-planted of the world's noble grape varieties. The particularly thick skin of the Cabernet Sauvignon grape results in wines that can be high in tannin which provides both structure and ageability. As a group, Cabernet Sauvignon wines are generally full-flavored, with a stronger flavor than Merlot for instance, and with a smooth and lingering "finish".
Cabernet Sauvignon has a well defined aroma. In Old World wines, particularly those made in Bordeaux, this is characterised by a smell of violets, blackcurrant, cedar and spice. New World wines of this grape can often share the aromas of their Old World counterparts, but are more often dominated by aromas of chocolate, ripe jammy berries, oak, pepper and earth. In Australia, there is often a strong smell of eucalyptus, particularly in wines made in Coonawarra. One of the most characteristic aromas of warm-climate examples is cassis (blackcurrant), while cherry and other red berry notes are not uncommon. Cooler-climate examples often reveal greener, herbaceous notes, such as eucalyptus or green pepper/capsicum. There is, however, a great deal of variation in flavor depending on the region, winemaking technique, seasonal weather, and bottle age. Nonetheless the wines retain a remarkable ability to be recognizably Cabernet.
Cabernet wines go well with hearty red meats, rich and flavorful pastas (red sauces), lamb, strong-flavored cheese, and chocolates, especially dark chocolates.

The leaves of Pinot noir are generally smaller than those of Cabernet Sauvignon, but larger than those of Syrah. The grape cluster is small and cylindrical, vaguely shaped like a pine cone. Some viticultural historians believe this shape may have given rise to the name. Pinot noir tends to produce narrow trunks and branches. In the vineyard it is sensitive to light exposure, cropping levels (it must be low yielding), soil types and pruning techniques. In the winery it is sensitive to fermentation methods, yeast strains and is highly reflective of its terroir with different regions producing very different wines. Its thin skin makes it highly susceptible to bunch rot and other fungal diseases. The vines themselves are prone to downy mildew, leaf roll, and fanleaf. These complications have given the grape the reputation of being difficult to grow: Jancis Robinson calls Pinot a "minx of a vine" and André Tchelistcheff declared that "God made Cabernet Sauvignon whereas the devil made Pinot noir."

The combination of Mediterranean climate, geography and geology of the valley are conducive to growing quality wine grapes. The valley floor is flanked by the Mayacamas Mountain Range on the western and northern sides the Vaca Mountains on the eastern side. Several smaller valleys also exist within these two ranges. The floor of the main valley gradually rises from sea level at the southern end to 362 feet (110 m) above sea level at the northern end in Calistoga at the foot of Mount Saint Helena. The Oakville and Rutherford American Viticultural Areas (AVAs) lie within a geographical area known as the Rutherford Bench in the center of the valley floor. The soil in the southern end of the valley consists mainly of sediments deposited by earlier advances and retreats of San Pablo Bay while the soil at the northern end of the valley contains a large volume of volcanic lava and ash. Several of the small hills that emerge from the middle of the valley floor near Yountville are indicators of the region's volcanic past.
